Description

The grapes are hand harvested in 20 kilo baskets from the parcel called Viña del Olivo – the vines are planted around a 700 year old olive tree. Fermentation in 1000L French oak vats and then malolactic fermentation and aging in 225l new French oak barrels, with a small percentage of American and Hungarian oak. The wine is left to age in bottle for a further 12 months.
