Selective hand-picking of grapes from our own vineyards. Some of our Pinot Noir grapes are pressed as a whole fruit, while the other part is only pressed after a maceration of about six hours. 

Fermentation and storage with natural yeasts in stainless steel tanks and wooden barrels.
